Ingredients:
Cake:
2 cups flour
2 cups sugar
1 teaspoon salt
2 teaspoons baking soda
5 eggs
1 1/2 cups oil
2 cups grated carrots
Icing:
1 pkg. cream cheese
1 stick butter
1 lb. powdered sugar
1 teaspoon vanilla
1 cup chopped walnuts
Instructions:
Grease a 9x13 baking pan. Preheat oven to 350º.
Mix dry cake ingredients and sift together. Beat eggs and oil until well mixed. Add to dry ingredients and mix well. Add carrots and mix well.
Bake for 30 minutes, cool before icing.
Icing: Cream butter and cream cheese. Add remaining ingredients and mix well. Spread over cake.
